This is a yummy dinner with grilled steak and sweet nectarine salsa. It comes with crispy zucchini fries instead of chips. It's a fun meal that tastes really good and is not too hard to make!

Ingredients

1 lb flank steak
1/2 tsp salt
1/4 tsp black pepper
1 tbsp extra virgin olive oil
2 nectarines
3/4 cup salsa
2 medium zucchinis
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder

Preheat your grill or grill pan over medium-high heat.

Season the flank steak with salt and pepper, then brush with olive oil.

Grill the steak for 5-7 minutes on each side or until it's cooked how you like it. Let it rest for 5 minutes, then slice it thin.

Cut the nectarines into small pieces and mix them with the salsa in a bowl.

Cut the zucchinis into sticks like fries. Put flour, beaten eggs, and a mix of panko, Parmesan, and garlic powder in three separate bowls.

Dip each zucchini stick in flour, then egg, then the panko mix. Lay them on a baking sheet.

Bake the zucchini fries in a preheated oven at 425°F (220°C) for 20 minutes or until they're golden and crispy.

Put the steak on plates, spoon some nectarine salsa over it, and add a bunch of zucchini fries on the side. Enjoy your meal!
