This is a yummy grilled steak served with a fresh berry salad. The salad has crunchy bread, sweet berries, and creamy cheese. It's a special meal that's not too hard to make!

Ingredients

1 whole grain baguette
1 lb flank steak
1/2 tsp coarse sea salt
1/2 tsp ground black pepper
1 tbsp olive oil
1 cup mixed berries (strawberries, blueberries, raspberries)
1/2 English cucumber
1/4 cup fresh mint leaves
1/4 cup balsamic glaze
2 oz feta cheese
1 tbsp honey
1 tbsp red wine vinegar
2 tbsp extra virgin olive oil
1 clove garlic

Method

Preheat your grill or grill pan to medium-high heat.

Cut the baguette into 1-inch cubes to make croutons.

Season the flank steak with salt and pepper on both sides.

Brush the grill with olive oil and grill the steak for about 5-7 minutes on each side for medium-rare, or until it's cooked to your liking. Then, let it rest for 5 minutes and slice thinly against the grain.

In a pan over medium heat, add 1 tablespoon of olive oil and toast the baguette cubes until they're golden brown, about 5 minutes.

Peel and mince the garlic clove. In a small bowl, whisk together the minced garlic, honey, red wine vinegar, and 2 tablespoons of extra virgin olive oil to make the dressing.

Wash the mixed berries, cucumber, and mint. Slice the cucumber and chop the mint leaves.

In a large bowl, combine the toasted baguette cubes, mixed berries, cucumber, and mint. Drizzle with the dressing and toss to coat.

Crumble feta cheese over the salad and drizzle with balsamic glaze.

Serve the sliced steak alongside the berry salad.
