Grilled Corn with Cilantro-Lime Butter recipe


This grilled corn is brushed with a zesty cilantro-lime butter. It's a delicious side dish that's perfect for a summer BBQ. You'll love the fresh flavors and the smoky taste from the grill!


4 ears of corn, husks removed
2 tbsp unsalted butter, softened
1 tbsp fresh cilantro, finely chopped
1 tsp lime zest
2 tbsp lime juice
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 cup cotija cheese, crumbled
1/4 tsp sea salt
1/4 tsp black pepper


Preheat your grill to medium-high heat.
In a small bowl, mix together the softened butter, chopped cilantro, lime zest, lime juice, garlic powder, and cayenne pepper until well combined.
Grill the corn on the preheated grill, turning occasionally, until the corn is cooked through and has light char marks, about 12-15 minutes.
Once the corn is grilled, brush the cilantro-lime butter over the hot corn, making sure to cover all sides.
Sprinkle the crumbled cotija cheese evenly over the buttered corn.
Season the corn with sea salt and black pepper to taste.
Serve the corn immediately, with extra lime wedges if desired.
