This is a grilled chicken dish with a tangy and spicy tamarind sauce. The chicken is marinated, grilled until juicy, and served with a special sauce made from tamarind and spices. It's a yummy dinner that's a little bit sweet and a little bit spicy.

Ingredients

8 Chicken Thighs
1 Tbsp Vegetable Oil
1 Tbsp Red Curry Paste
2 Tbsp Soy Sauce
1 Tbsp Honey
1 Tbsp Tamarind Paste
2 Tbsp Water
1 Tbsp Fish Sauce
1 Tbsp Lime Juice
1 Tsp Brown Sugar
1 Tsp Chili Powder
1 Red Onion
2 Tbsp Chopped Cilantro
1/4 Cup Roasted Peanuts, crushed
Steamed Jasmine Rice, to serve

Preheat the grill to medium-high heat.

In a bowl, mix together 1 Tbsp vegetable oil, 1 Tbsp red curry paste, 2 Tbsp soy sauce, and 1 Tbsp honey. Coat the chicken thighs evenly with the marinade and let them sit for 15 minutes.

Grill the chicken thighs for about 15 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

While the chicken is grilling, prepare the tamarind sauce. In a small saucepan, combine 1 Tbsp tamarind paste, 2 Tbsp water, 1 Tbsp fish sauce, 1 Tbsp lime juice, 1 tsp brown sugar, and 1 tsp chili powder. Heat over medium heat, stirring until the sugar dissolves and the sauce thickens slightly.

Finely slice the red onion and chop the cilantro.

Once the chicken is done, let it rest for a few minutes, then slice it if desired.

Serve the grilled chicken with steamed jasmine rice, drizzle with the spicy tamarind sauce, and garnish with sliced red onion, chopped cilantro, and crushed roasted peanuts.
