Grilled Chicken Tacos with Pineapple Salsa recipe


This is a yummy taco recipe with grilled chicken and a sweet pineapple salsa. You put chicken, salsa, and greens in a tortilla. It's fun to make and eat!


1/2 head romaine lettuce
1 lb chicken breasts, boneless skinless
1/4 small bunch cilantro
3 cloves garlic
1/2 red onion
1 lime
1 large pineapple
1 orange bell pepper
8 small flour tortillas
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
1 tablespoon avocado oil
1/2 teaspoon salt


Preheat your grill to medium-high heat.
Wash and dry all fresh produce. Peel and mince garlic and red onion. Chop the cilantro leaves finely.
Cut the pineapple into small cubes. Seed and dice the orange bell pepper.
In a bowl, mix together the pineapple, bell pepper, half of the minced garlic, half of the chopped cilantro, juice of the lime, and a pinch of salt to create the pineapple salsa. Set aside.
Pat the chicken breasts dry with paper towels. Season both sides with smoked paprika, black pepper, and salt.
Brush the grill with avocado oil. Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
While the chicken is grilling, chop the romaine lettuce into thin strips.
Transfer the cooked chicken to a plate and let it rest for a few minutes before slicing it into strips.
Warm the flour tortillas on the grill for about 30 seconds on each side, or until they are soft and have grill marks.
To assemble the tacos, distribute the tortillas among plates. Add a layer of romaine lettuce, followed by grilled chicken strips, and top with the pineapple salsa. Garnish with the remaining cilantro.
