This is a yummy taco recipe with grilled chicken and a fresh avocado salsa. You cook chicken with spices, make a salsa with avocado, and put it all in a tortilla with cheese.

Ingredients

4 medium avocados, diced

400 g chicken breast

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp ground black pepper

8 flour tortillas

200 g shredded Monterey Jack cheese

1 large lime

1 small bunch of cilantro, chopped

1 green bell pepper, diced

2 cloves of garlic, minced

1 small red onion, finely sliced

1 tbsp olive oil

Salt to taste

Method

In a bowl, mix together 1 tsp salt, smoked paprika, garlic powder, onion powder, and black pepper. Rub this spice mix onto the chicken breasts.

Heat a grill pan over medium-high heat and brush with olive oil. Grill the chicken for about 10 minutes on each side or until fully cooked. Let it rest for 5 minutes, then slice thinly.

While the chicken is resting, prepare the avocado salsa by combining diced avocados, diced green bell pepper, minced garlic, the juice of one lime, chopped cilantro, and salt to taste in a bowl.

In a separate small bowl, mix the sliced red onion with the juice of half a lime and a pinch of salt. Set aside to quick-pickle.

Warm the flour tortillas in a dry pan over medium heat for about 30 seconds on each side.

Assemble the tacos by placing a portion of grilled chicken on each tortilla, followed by a generous spoonful of avocado salsa, some pickled red onion, and a sprinkle of shredded Monterey Jack cheese.

Serve immediately with lime wedges on the side for extra zing.
