Grilled Chicken Skewers with Spicy Peanut Dip & Cucumber Salad recipe


This is a yummy grilled chicken dish on sticks with a spicy peanut sauce. It comes with a fresh cucumber salad. You cook the chicken until it's just right, mix a tasty sauce, and toss the salad. It's a fun meal!


1.5 lb chicken thighs, boneless skinless
1 small bunch cilantro, divided
3 English cucumbers
1 x 1 inch piece ginger root
2 limes, juiced
1 medium red onion
1/4 teaspoon crushed red pepper, plus more for garnish
2 tablespoons honey
1/2 cup natural peanut butter
3 tablespoons rice vinegar
4 tablespoons soy sauce
1/2 teaspoon turmeric, ground
2 tablespoons virgin coconut oil


Preheat your grill or skillet over medium-high heat and brush with coconut oil.
Cut the chicken thighs into bite-sized pieces and thread onto 12 skewers. Set aside.
Peel and mince the ginger. In a bowl, combine the ginger, peanut butter, 1/4 cup of water, 2 tablespoons of rice vinegar, 2 tablespoons of soy sauce, 1 tablespoon of honey, juice of 1 lime, turmeric, and 1/4 teaspoon of crushed red pepper. Mix well to create the peanut sauce.
Take half of the peanut sauce and set aside in a small bowl for dipping.
Wash cilantro, and finely chop the leaves. Divide into two equal portions.
Add one portion of the chopped cilantro to the remaining peanut sauce and stir. This will be used to marinate the chicken skewers.
Coat the chicken skewers with the cilantro peanut sauce and let them marinate for 5 minutes.
Grill the chicken skewers for 3-4 minutes on each side or until fully cooked and slightly charred.
While the chicken is cooking, prepare the cucumber salad. Peel and thinly slice the red onion. Wash, trim ends, and thinly slice the cucumbers into half-moons.
In a large bowl, whisk together the remaining lime juice, 1 tablespoon of rice vinegar, 2 tablespoons of soy sauce, 1 tablespoon of honey, and a pinch of crushed red pepper to create the salad dressing.
Add the sliced cucumbers, red onion, and the remaining chopped cilantro to the dressing and toss well.
Serve the grilled chicken skewers with the spicy peanut dip and cucumber salad on the side. Garnish with additional crushed red pepper if desired.
