Grilled Chicken Skewers with Soba Noodle Salad recipe

This is a yummy meal with chicken on sticks and noodles. The chicken has a special sauce and the noodles are mixed with fresh veggies. It's fun to eat and tastes really good!

Ingredients

700 grams chicken breasts, boneless skinless
1 small bunch cilantro
1 large carrot
2 English cucumbers
1 small package fresh basil
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon chili flakes
200 grams soba noodles
1 tablespoon olive oil
Salt to taste
1 tablespoon sesame seeds

Method

Start by soaking 12-18 wooden skewers in water for at least 20 minutes to prevent burning.

Cut the chicken into bite-sized pieces and place them in a bowl.

In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of honey, and chili flakes to create a marinade.

Pour the marinade over the chicken pieces, stir to coat, and let it sit for 15 minutes.

Bring a large pot of water to a boil, add soba noodles, and cook according to package instructions, usually 5-7 minutes, then drain and rinse under cold water.

Preheat a grill pan over medium-high heat and brush with olive oil.

Thread the marinated chicken onto the skewers and grill for about 10 minutes, turning occasionally, until fully cooked.

For the salad, peel and julienne the carrot, and slice the cucumbers into thin rounds.

In a large bowl, mix the remaining 1 tablespoon of soy sauce, 1 tablespoon of honey, and rice vinegar to make the dressing.

Add the carrots and cucumbers to the dressing, tossing to coat.

Chop the cilantro and basil leaves, discarding the stems, and add them to the salad.

Toss the soba noodles with the vegetable salad.

Serve the grilled chicken skewers over the soba noodle salad, sprinkled with sesame seeds.
