Grilled Chicken Salad with Mango, Spinach & Goat Cheese recipe


This is a yummy salad with grilled chicken, sweet mango, fresh spinach, and creamy goat cheese. It's easy to make and perfect for lunch or dinner. You mix everything in a bowl and it's ready to eat!


2 boneless, skinless chicken breasts
6 cups baby spinach
1 large ripe mango
4 oz goat cheese, crumbled
1 medium red onion
1/4 cup balsamic vinegar
2 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1 tablespoon fresh lime juice


Preheat your grill to medium-high heat.
Season the chicken breasts with salt and pepper, then grill for about 7-8 minutes on each side, or until fully cooked. Let them rest for 5 minutes and then slice thinly.
Peel and dice the mango into bite-sized pieces.
Peel, halve, and thinly slice the red onion.
In a large bowl, whisk together balsamic vinegar, honey, olive oil, lime juice, salt, and pepper to create the dressing.
Add the sliced onions to the dressing and let them marinate for about 10 minutes.
Add the baby spinach, diced mango, and crumbled goat cheese to the bowl with the onions and dressing. Toss everything to coat with the dressing.
Divide the salad onto plates, top with sliced grilled chicken, and serve immediately.
