Grilled Chicken Salad with Avocado Caesar Dressing recipe

This is a yummy salad with grilled chicken, crunchy homemade croutons, and a creamy dressing. The dressing is made with avocado and yogurt. It's a fresh meal with lettuce, cheese, and tasty chicken.

Ingredients

1 lb chicken breasts, boneless skinless
6 cloves garlic, minced
1 ripe avocado
1/2 cup plain Greek yogurt
1/2 cup shredded Parmesan cheese
2 heads romaine lettuce, chopped
2 multigrain bread slices
1/2 tsp black pepper
1/2 tsp Dijon mustard
2 tbsp extra virgin olive oil
1/2 tsp dried oregano
1/2 tsp salt
1 tbsp lemon juice
1 tsp anchovy paste (optional)

Method

Preheat oven to 400°F (200°C).

Cut bread into cubes and place on a baking sheet. Mix 2 cloves of minced garlic with 1 tbsp olive oil, oregano, salt, and pepper. Drizzle over bread cubes and toss to coat. Bake for 10 minutes or until crispy.

Heat a grill pan over medium-high heat. Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side or until fully cooked. Let it rest for a few minutes, then slice.

For the dressing, blend the avocado, remaining 4 cloves of minced garlic, Greek yogurt, lemon juice, 1/4 cup Parmesan cheese, Dijon mustard, anchovy paste (if using), and 1 tbsp olive oil until smooth. Season with salt and pepper to taste.

In a large bowl, toss the chopped romaine lettuce with half of the dressing. Plate the lettuce, top with grilled chicken slices, and homemade croutons.

Drizzle the remaining dressing over the salad, sprinkle with the remaining Parmesan cheese, and serve immediately.
