Grilled Chicken Flatbread with Spicy Mayo Slaw recipe

This is a yummy grilled chicken flatbread with a spicy mayo slaw. You grill chicken with tasty spices, then put it on flatbread with a slaw that has a little kick. It's a fun meal for lunch or dinner!

Ingredients

4 boneless chicken thighs
1 tbsp smoked paprika
1 tbsp brown sugar
1/2 red onion
1/4 cup chopped cilantro
1 lemon
1/4 head of purple cabbage
150 g mayonnaise
1 tbsp sriracha sauce
4 flatbreads
2 tbsp olive oil
Salt to taste
Black pepper to taste

Method

Preheat your grill to medium-high heat.

In a bowl, mix together 1 tbsp smoked paprika, 1 tbsp brown sugar, 1/2 tsp salt, and a pinch of black pepper.

Rub the spice mixture all over the 4 boneless chicken thighs.

Grill the chicken thighs for about 10 minutes on each side, until fully cooked and slightly charred.

While the chicken is grilling, thinly slice 1/2 red onion and 1/4 head of purple cabbage, and place them in a bowl.

Add the juice of 1 lemon to the bowl with the onions and cabbage. Toss with 150 g mayonnaise and 1 tbsp sriracha sauce. Season with salt and pepper to taste.

Chop the grilled chicken into bite-sized pieces and toss with 2 tbsp olive oil and chopped cilantro.

Warm the flatbreads on the grill for about 1 minute on each side.

Assemble the flatbreads by adding a layer of the spicy mayo slaw and then topping with the grilled chicken.
