Grilled Chicken and Berry Salad with Feta and Walnuts recipe

This is a yummy salad with grilled chicken, fresh berries, and creamy avocado. It has crunchy walnuts and tangy feta cheese. We make a sweet honey dressing to put on top. It's good for lunch or dinner.

Ingredients

1 lb chicken breasts, boneless skinless
1/2 tsp salt
1/4 tsp black pepper
1 tbsp extra virgin olive oil
2 cups baby spinach
1 cup mixed berries (strawberries, blueberries, raspberries)
2 avocados, sliced
1/3 cup walnuts, chopped
1/4 cup feta cheese, crumbled
2 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard

Method

Wash and dry the spinach and berries. If the spinach is pre-washed, you can skip this step.

Cut the strawberries into quarters and mix with the other berries.

Halve and pit the avocados, then cut them into slices.

Chop the walnuts and crumble the feta cheese.

Preheat a grill pan or skillet over medium heat.

Season the chicken with salt and pepper, then rub with olive oil.

Grill the chicken until golden brown and cooked through, about 3-4 minutes per side. Then let it rest before slicing into strips.

In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper to make the dressing.

Arrange the spinach on plates and top with avocado slices, mixed berries, grilled chicken strips, walnuts, and feta cheese.

Drizzle the honey balsamic dressing over the salad just before serving.
