Grilled Cheese and Pomegranate Salad recipe

This is a yummy salad with grilled cheese and sweet pomegranate. It has crunchy veggies and a tangy dressing. You mix everything in a big bowl and eat it!

Ingredients

250 g Halloumi cheese
1 Pomegranate
1 Cucumber
300 g Grape tomatoes
1 Yellow bell pepper
1 Small red onion
150 g Canned corn, drained
15 g Fresh basil
15 g Fresh dill
2 Tbsp Olive oil
3 Tbsp Lemon juice
1 Tbsp Maple syrup
1 Tbsp Dijon mustard
Salt and pepper to taste

Method

Cut the halloumi cheese into 1/2-inch slices and grill them in a pan with 1 tablespoon of olive oil over medium heat until they are golden brown on both sides.

Open the pomegranate and take out the seeds. Be careful not to get the white parts. Put the seeds in a big bowl.

Chop the cucumber, grape tomatoes, yellow bell pepper, and red onion into small pieces. Add them to the bowl with the pomegranate seeds.

Add the drained corn to the bowl with the chopped veggies and pomegranate seeds.

Chop the fresh basil and dill and add them to the salad.

In a small bowl, mix 1 tablespoon of olive oil, lemon juice, maple syrup, and Dijon mustard. Add salt and pepper to taste. This is your dressing.

Pour the dressing over the salad and mix everything gently.

Put the grilled halloumi on top of the salad and serve right away.
