Grilled Beef Skewers with Spiced Couscous & Vegetables recipe


This is a yummy meal with grilled beef on sticks and spicy couscous. It has colorful veggies like peppers and zucchini. You cook the beef and veggies under a hot oven grill and mix the couscous with tasty spices.


1 cup couscous
1 1/4 lb sirloin steak
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 large red bell pepper
1 large yellow bell pepper
1 large zucchini
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley


Preheat the oven to broil and place the rack about 6 inches from the heat source.
Cut the sirloin steak into 1-inch cubes and season with salt and black pepper.
Wash the red and yellow bell peppers, remove the seeds and cut into 1-inch pieces.
Wash the zucchini, trim the ends, and cut into 1-inch rounds.
In a bowl, mix the olive oil with smoked paprika, ground cumin, and ground cinnamon.
Toss the steak cubes and vegetables in the spiced oil until well coated.
Thread the beef, bell peppers, and zucchini onto skewers and place them on a baking sheet.
Broil the skewers for about 10 minutes, turning once, until the beef is cooked to your liking.
While the skewers are cooking, prepare the couscous according to the package instructions.
Chop the fresh parsley and stir it into the cooked couscous.
Serve the grilled skewers over the spiced couscous and enjoy!
