Grilled Asparagus with Lemon recipe


This is a yummy veggie dish. It's asparagus cooked on a grill. We add lemon and cheese to make it taste super good. It's easy to make for dinner or lunch.


24 asparagus spears, trimmed
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon lemon juice
1/2 cup shaved Parmesan cheese
4 large eggs
1 teaspoon white vinegar


Preheat your grill to medium-high heat.
Place the asparagus on a tray and drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
Grill the asparagus for about 5 minutes, turning occasionally, until they are lightly charred and crisp-tender.
While the asparagus is grilling, bring a pot of water to a gentle simmer and add the white vinegar.
Carefully crack the eggs into the water one at a time, and poach for 3 to 4 minutes until the whites are set but yolks are still runny.
Remove the eggs with a slotted spoon and set aside on a warm plate.
Transfer the grilled asparagus to a serving platter and squeeze lemon juice over the top.
Place a poached egg on top of the asparagus and garnish with shaved Parmesan cheese.
Serve immediately while warm.
