Greek Chicken Skewers recipe


This is a yummy chicken dish with a Greek twist. You put chicken on sticks and cook it with spices. Then you eat it with bread, hummus, and a fresh salad. It's a fun meal that tastes like sunshine!


2 chicken breasts, cut into 4 cm cubes
3 tsp olive oil, divided
2 tsp dried oregano
1 pinch dried chilli flakes
1 lemon, juiced
1 tbsp balsamic vinegar
1 (110 g) bag baby leaf salad
1 handful cherry tomatoes, sliced
2 spring onions, sliced
1/4 cucumber, sliced
1/2 red pepper, sliced
2 large wholemeal pittas, heated
100 g hummus


In a bowl, mix 2 tsp olive oil, oregano, chilli flakes, and a pinch of salt. Add the chicken cubes and toss to coat.
Thread the chicken pieces onto 4 metal skewers.
Heat the grill to high and cook the skewers for 5 minutes on each side or until charred and cooked through. Squeeze half the lemon juice over the cooked chicken.
For the salad, whisk together 1 tsp olive oil, balsamic vinegar, and the remaining lemon juice with a little seasoning in a large bowl. Add the baby leaf salad, cherry tomatoes, spring onions, cucumber, and red pepper. Toss well.
Serve the chicken skewers with the salad, stuffed into heated pittas, and a dollop of hummus on the side.
