Golden Zucchini Coins with Honeyed Ricotta recipe

This is a yummy dish with round zucchini slices that are fried until they're golden. They are put on creamy cheese with sweet honey and a little spicy kick. It's a fun snack or side dish!

Ingredients

60 g All-Purpose Flour
60 g Cornstarch
100 ml Sparkling Water
1/2 Lemon (for zest and juice)
2 Medium Zucchinis, sliced into 1/4-inch rounds
200 g Ricotta Cheese
1/4 tsp Red Pepper Flakes
1 tbsp Fresh Parsley, chopped
250 ml Vegetable Oil (For Frying)
1 tbsp Honey
Sea Salt, to taste
Black Pepper, to taste

Method

In a bowl, whisk together the all-purpose flour, cornstarch, and a pinch of salt. Slowly add the sparkling water to the dry ingredients, stirring until a smooth batter forms.

Slice the zucchinis into 1/4-inch rounds and pat them dry with a paper towel.

Heat the vegetable oil in a deep pan over medium-high heat until it reaches 180°C or until a small amount of batter sizzles when dropped in.

Dip the zucchini slices into the batter, ensuring each one is well coated, then carefully place them in the hot oil. Fry for about 2-3 minutes on each side or until they turn golden brown.

Remove the zucchini coins from the oil and let them drain on a plate lined with paper towels. Season with sea salt while still hot.

In a separate bowl, combine the ricotta cheese with lemon zest, lemon juice, a pinch of salt, and black pepper. Whip the mixture with a whisk until it becomes smooth and airy.

Spread the whipped ricotta on a serving plate. Arrange the crispy zucchini coins on top of the ricotta.

Sprinkle the red pepper flakes and chopped parsley over the zucchini. Drizzle honey over the entire dish just before serving.
