Goat Cheese Stuffed Sweet Potatoes with Cilantro Lime Sauce Recipe

This is a yummy dish with sweet potatoes filled with creamy goat cheese. It's topped with a fresh cilantro lime sauce. You bake the potatoes, mix cheese with spices, stuff them, and bake again. Then you pour the green sauce on top.

Ingredients

4 large sweet potatoes
200 g goat cheese
120 ml heavy cream
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp ground black pepper
1/4 cup chopped walnuts
2 tbsp olive oil
1/2 cup fresh cilantro
1 lime
1/4 tsp sea salt
1 tbsp honey

Method

Preheat your oven to 200°C (400°F).

Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet, rub with 1 tablespoon of olive oil, and bake for 50 minutes or until tender.

While the sweet potatoes are baking, prepare the cilantro lime sauce by blending the cilantro, juice of the lime, remaining olive oil, honey, and sea salt until smooth. Set aside.

In a bowl, mix the goat cheese, heavy cream, smoked paprika, garlic powder, and black pepper until well combined.

Once the sweet potatoes are done, cut them in half lengthwise and let them cool for a few minutes.

Scoop out the insides of each sweet potato half, leaving a thin layer of sweet potato inside the skin to maintain its shape.

Add the scooped sweet potato to the goat cheese mixture and mash until smooth. Stir in the chopped walnuts.

Spoon the mixture back into the sweet potato skins.

Place the stuffed sweet potatoes back into the oven for 10 minutes, until the tops are slightly golden.

Serve the stuffed sweet potatoes drizzled with the cilantro lime sauce.
