Ginger Turkey Meatball and Vegetable Stir-Fry with Soba Noodles recipe

This is a yummy dish with meatballs made from ground turkey and ginger. It has noodles, veggies, and nuts. You cook the meatballs, then the veggies, and mix them with noodles and a tasty sauce. Top with nuts to finish!

Ingredients

3 medium carrots
1/3 cup roasted unsalted almonds
1 small bunch cilantro
3 tablespoons minced ginger
2 small bunches green onions
1 lb ground turkey
24 oz sugar snap peas
1/2 teaspoon black pepper
1/2 teaspoon ground cinnamon
1/4 teaspoon ground clove
2 tablespoons fish sauce
8 oz soba noodles
1 teaspoon garlic powder
2 tablespoons honey
3 tablespoons soy sauce
2 tablespoons vegetable oil

Method

Fill a large pot halfway with water and bring to a boil. Add soba noodles and cook according to package directions, then drain and rinse with cold water; set aside.

In a small bowl, combine soy sauce, fish sauce, honey, cinnamon, clove, and garlic powder; whisk together and set aside.

In a medium bowl, mix ground turkey, minced ginger, additional soy sauce, and black pepper. Form into meatballs using a tablespoon measure.

Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook meatballs until browned and cooked through, about 6-8 minutes. Transfer to a plate and cover with foil.

Peel and slice carrots; halve snap peas. Slice green onions. Add all to a bowl.

In the same skillet, add remaining oil. Stir-fry carrots, snap peas, and green onions until tender, about 4-5 minutes.

Add cooked soba noodles, prepared sauce, and cilantro to the skillet with the veggies. Stir until noodles are coated and heated through, about 2-3 minutes.

Roughly chop almonds.

Serve the stir-fry topped with meatballs and almonds.
