Ginger Tofu & Broccoli Stir-Fry with Jasmine Rice recipe

This is a yummy dish with rice, tofu, and broccoli. We cook the rice and then fry the tofu until it's golden. We add broccoli and a tasty sauce. Then we mix it all together and eat it!

Ingredients

1 1/4 cups jasmine rice
2 x (14 oz) packages extra firm tofu
1 tablespoon fresh ginger, minced
1 large bunch broccoli, cut into florets
2 tablespoons cornstarch
2 tablespoons honey
3 tablespoons rice vinegar
1/4 teaspoon salt
1 tablespoon sesame seeds
1/4 cup soy sauce
2 tablespoons toasted sesame oil
2 tablespoons olive oil
1/4 cup water

Method

Rinse the jasmine rice in a strainer under cold water, then drain and put it in a pot. Add salt and 2 1/2 cups of water, and boil it. When it boils, cover the pot, turn the heat low, and cook for 18 minutes. Then turn off the heat and let it sit covered for 5 minutes.

While the rice cooks, wash the broccoli and cut it into small tree-like pieces.

Peel the ginger and chop it up really small until you have 1 tablespoon.

Open the tofu packages, pour out the water, and press the tofu with paper towels to get rid of extra water. Cut the tofu into 1-inch pieces.

Put a pan on medium heat. When it's hot, put in the sesame seeds. Stir them around until they're light brown, about 2 minutes. Put them on a plate for later.

Use the same pan and turn the heat to medium-high. Add the olive oil and tofu. Cook the tofu for about 5 minutes until it's brown and crispy. Take the tofu out and put it on a plate.

Put the broccoli and ginger in the pan. Cook them for about 3 minutes until the broccoli is bright green and a little soft.

In a bowl, mix the cornstarch, water, soy sauce, rice vinegar, honey, and sesame oil. Stir it all up.

Put the tofu back in the pan with the broccoli. Pour the sauce over it and cook for 2 minutes, stirring everything so the sauce covers it all.

Put the rice in bowls. Spoon the tofu and broccoli stir-fry over the rice. Sprinkle the toasted sesame seeds on top. Now it's ready to eat!
