Garlic Shrimp with Herbed Spaghetti Squash recipe

This dish is a yummy mix of shrimp and squash. You cook squash to make it like spaghetti. Then you cook shrimp with garlic and herbs. Put the shrimp on the squash to eat.

Ingredients

4 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup fresh oregano, chopped
1 lemon, zested and juiced
1 lb raw peeled shrimp, fresh or frozen
2 medium spaghetti squash, halved and seeded
1/4 tsp black pepper
2 tbsp unsalted butter
1/4 tsp crushed red pepper
3 tbsp extra virgin olive oil
1/2 tsp salt

Method

Preheat your oven to 475°F. Put a rack in the middle. You can line a baking sheet with foil if you want.

Wash the squash. Cut it in half and take out the seeds. Rub the halves with 1 tbsp olive oil and sprinkle with 1/4 tsp salt and some pepper. Put them on the baking sheet with the cut side down.

Cook the squash in the oven until it's soft, about 20-25 minutes.

While the squash is cooking, chop the basil and oregano. Put them in a bowl.

Add the lemon zest and half of the lemon juice to the herbs.

Heat a pan over medium heat. If your shrimp are frozen, rinse them to thaw a bit and take off any ice. Dry the shrimp with a towel.

When the pan is hot, put in 2 tbsp olive oil and the butter. Let them melt and mix.

Put the garlic and red pepper in the pan. Cook until it smells good, about 30 seconds.

Add the shrimp. Cook them until they're not see-through anymore, about 2-4 minutes.

Put the herb mix, the rest of the lemon juice, and a pinch of salt and pepper into the pan with the shrimp. Stir it all together.

Take the squash out of the oven. Let it cool for a bit, then use a fork to make the squash look like spaghetti.

Put the squash on plates and top with the shrimp and sauce. Now it's ready to eat!
