Garlic Chicken Lo Mein: This delicious garlic chicken lo mein is so easy to make and the perfect take-out fake out.

Ingredients

1 Tbs olive oil
1 Tbs Garlic (minced)
1/2 tsp fresh ginger
1 1/2 lbs chicken breast (diced small)
1 zucchini (diced small)
1 yellow squash (diced small)
1/2 a large red bell pepper (diced small)
1 cup small chopped broccoli
1 cup sugar snap peas
1/2 a package lo mein noodles
1 tablespoon of rice wine (Mirin or dry sherry)
2 tsp brown sugar
2 tsp sesame oil
1 tsp fish sauce
1/2 tsp soy sauce
1 tsp of chili garlic paste or Sriracha sauce
1 Tbs oyster sauce
2 Tbs water
1/2 tsp garlic salt

Method

Cook lo mein noodles according to package directions.

Mix sauce and set aside.

Place a large skillet over medium heat, and add olive oil.

Add garlic and ginger, and saute for 1-2 minutes until fragrant

Add chicken, and cook 2-3 minutes, then add in vegetables, except broccoli and sugar snap peas.

Cook until veggies are tender and chicken is cooked through, approximately 3-5 minutes

Add noodles and sauce, toss everything together, and add broccoli and sugar snap peas to pan.

Cook an additional 1-2 minutes, to reduce sauce, and cook broccoli.

Serve hot!
