This is a sweet and yummy jam you can spread on bread or crackers. It's made with fresh fruit and sugar. You cook it until it's just right. Then you put it in jars to eat later.

Ingredients

1.5 kg mixed berries (strawberries, raspberries, blackberries)
1.2 kg granulated sugar
2 tbsp lemon juice
1 tsp vanilla extract

Method

Prepare your jars by washing them in soapy water and then placing them in a preheated oven at 100C for 10 minutes to sterilize.

Place the mixed berries in a large, heavy-based pan and crush them lightly with a potato masher or fork to release their juices.

Add the granulated sugar and lemon juice to the pan with the berries and heat gently, stirring constantly, until the sugar has completely dissolved.

Increase the heat and bring the mixture to a full rolling boil. Boil for 15-20 minutes, or until the jam reaches the setting point of 105C. You can test if the jam is ready by placing a small amount on a cold plate. If it wrinkles when pushed with a finger, it's done.

Remove the pan from the heat and stir in the vanilla extract. Let the jam cool for a few minutes before pouring it into the prepared jars.

Seal the jars while the jam is still hot. Allow to cool completely before labeling. Store in a cool, dark place and refrigerate after opening.
