Feta, Thyme and Lemon Roasted Brussels Sprouts recipe

This dish is a mix of crispy Brussels sprouts with tangy feta cheese. We add lemon for a fresh taste and thyme for a herby touch. It's cooked in the oven and is yummy!

Ingredients

200 g Feta Cheese
1 Yellow Onion
600 g Brussels Sprouts
1 Lemon
1 Tbsp Fresh Thyme Leaves
80 g Dried Cranberries
2 Tbsp Olive Oil
1/4 Tsp Black Pepper
1/4 Tsp Salt

Method

Preheat your oven to 200°C (400°F).

Prepare your ingredients: Cut the feta cheese into 1 cm cubes. Peel and slice the yellow onion. Trim the ends off the Brussels sprouts and cut them in half.

Place the Brussels sprouts and onion on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.

Roast in the oven for 15 minutes, until the sprouts start to brown.

Remove the baking sheet from the oven. Add the feta cheese, thyme leaves, and the zest of the lemon over the sprouts. Squeeze half the lemon juice over the mixture.

Return the baking sheet to the oven and roast for an additional 10 minutes, or until the cheese is slightly golden and the sprouts are crispy.

Take the baking sheet out of the oven and let it cool for a couple of minutes. Sprinkle dried cranberries on top before serving.
