Festive Turkey and Cranberry Pastry Bites recipe

These are yummy little bites made with turkey, cranberry, and cheese wrapped in flaky pastry. They are perfect for a holiday party or a fun snack. You mix meat, cheese, and fruit, then wrap it in pastry and bake until golden.

Ingredients

50 g grated mozzarella
300 g ground turkey
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 small pear
100 g cranberry sauce
1 large onion
320 g puff pastry sheet
1 egg, beaten
30 g dried cranberries, chopped
1 tablespoon olive oil
1 pinch of salt
1 pinch of black pepper
1 tablespoon milk

Method

Preheat your oven to 200°C/392°F.

Finely chop the large onion and sauté in a pan with 1 tablespoon of olive oil until soft and translucent.

Add 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary to the onions, and cook for another 2 minutes. Set aside to cool.

In a large bowl, combine the cooled onion mixture with 300 g of ground turkey, 50 g of grated mozzarella, and 30 g of chopped dried cranberries. Season with a pinch of salt and black pepper.

Peel and grate the small pear, squeeze out the excess moisture, and add to the turkey mixture. Mix well.

Roll out the 320 g puff pastry sheet and cut it into 24 squares.

Place a teaspoon of the turkey mixture onto the center of each square.

Top each with a small dollop (about 1/2 teaspoon) of cranberry sauce.

Brush the edges of the pastry squares with the beaten egg mixed with 1 tablespoon of milk.

Fold the pastry over the filling to create a triangle shape, pressing the edges to seal.

Place the pastry bites on a baking sheet lined with parchment paper.

Brush the tops of the pastry bites with the remaining egg wash.

Bake in the preheated oven for 25 minutes, or until the pastry is puffed and golden brown.

Allow to cool slightly before serving.
