This is a yummy coffee-flavored Italian dessert. It has layers of coffee-dipped cookies and a creamy mix. It's topped with chocolate and needs to chill before you eat it.

Ingredients

4 Eggs
100 g Granulated Sugar
475 g Mascarpone
200 g Ladyfingers
350 ml Espresso
30 ml Coffee Liqueur
30 g Dark Chocolate
1 Tbsp Unsweetened Cocoa Powder
1 tsp Vanilla Extract

Method

Separate the eggs, placing the whites in a large mixing bowl and the yolks in another.

Whisk the egg whites with 50 g of sugar until soft peaks form. Set aside.

Add the remaining 50 g of sugar and vanilla extract to the yolks, whisking until pale and creamy.

Fold the mascarpone into the yolk mixture until smooth.

Gently fold the egg whites into the mascarpone mixture, being careful not to deflate the mixture.

Brew 350 ml of espresso and mix with the coffee liqueur in a shallow dish.

Quickly dip each ladyfinger into the espresso mixture, ensuring they are moist but not soggy.

Arrange a layer of dipped ladyfingers at the bottom of a serving dish.

Spread half of the mascarpone mixture over the ladyfingers.

Grate half of the dark chocolate over the mascarpone layer.

Repeat with another layer of dipped ladyfingers, the remaining mascarpone mixture, and grated dark chocolate.

Cover and refrigerate for at least 4 hours, or overnight to set.

Before serving, dust the top with unsweetened cocoa powder.
