Egg Salad Sandwich with Arugula and Cheddar Recipe

This is a yummy sandwich with eggs, cheese, and greens. You boil eggs, mix them with tasty things, and put it all on bread. It's good for lunch and easy to make!

Ingredients

4 large eggs
30 g sharp cheddar cheese, grated
30 g arugula
1/2 teaspoon garlic powder
1 tablespoon lemon juice
2 tablespoons mayonnaise
1 teaspoon yellow mustard
4 slices of whole wheat bread
1 tablespoon unsalted butter
Salt to taste
Black pepper to taste

Method

Start by boiling the eggs. Place eggs in a pot and cover with cold water. Bring to a boil, then simmer for 8 minutes for a slightly jammy yolk. Drain and cool under cold water. Peel the eggs once cool.

In a bowl, mash the peeled eggs with a fork. Add mayonnaise, yellow mustard, garlic powder, lemon juice, salt, and black pepper. Mix until well combined.

Stir in the grated cheddar cheese into the egg mixture.

Toast the whole wheat bread slices until golden and spread butter on one side of each slice.

Divide the egg mixture onto two slices of the toasted bread, spreading it evenly.

Top the egg mixture with fresh arugula leaves, then cover with the remaining slices of bread, buttered side down.

Cut each sandwich in half and serve immediately.
