Egg & Bean Breakfast Tostadas with Salsa & Cheddar recipe

This is a yummy breakfast with crunchy tortillas, eggs, beans, cheese, and salsa. You cook eggs and put them on tortillas with beans and cheese. Then you add salsa on top. It's good for breakfast and makes you full!

Ingredients

4 small corn tortillas
4 large eggs
1 cup canned black beans, drained and rinsed
1/2 cup shredded cheddar cheese
1/2 cup salsa
1 tablespoon olive oil
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
Salt to taste
1/4 cup chopped fresh cilantro (optional)

Method

Preheat your oven to 400°F (205°C).

Place the tortillas on a baking sheet and brush both sides with olive oil. Sprinkle a little salt on top.

Bake the tortillas in the oven for 5-7 minutes or until they are crispy and golden brown.

While the tortillas are baking, heat a non-stick skillet over medium heat.

Add the black beans to the skillet and season with garlic powder, ground cumin, and salt. Cook for 3-4 minutes until they are warm.

In another skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook them for about 4 minutes, or until the whites are set but the yolks are still runny.

Take the crispy tortillas out of the oven and spread the warm black beans on top.

Place one cooked egg on each tortilla.

Sprinkle shredded cheddar cheese over the eggs and beans.

Put the tortillas back in the oven for about 1 minute to melt the cheese.

Take the tortillas out of the oven and top them with salsa. If you like, you can also add some chopped cilantro on top.

Serve your tasty breakfast tostadas while they're hot and enjoy!
