Curried Chickpea Veggie Burger recipe

This is a veggie burger with a twist! It's made with chickpeas and has a curry flavor. The burger is crispy and served on a toasted bun with a special sauce and crunchy slaw. It's a yummy dinner for everyone.

Ingredients

1 tsp cumin seeds
1 large red onion, finely sliced
2 tbsp tomato paste
2 tbsp curry powder
6 tbsp vegan mayonnaise
1 tbsp sriracha sauce
1/2 cup shredded purple cabbage
1/4 cup sliced pickled jalapeños
50 g sliced radishes
15 g chopped cilantro
Juice of 1 lime
2 cups cooked chickpeas
4 whole grain burger buns
2 tbsp olive oil
Salt to taste

Method

Heat a pan over medium heat and add the cumin seeds. Toast for 1 minute until fragrant.

Add the olive oil and sliced onions to the pan. Cook for 15 minutes until softened and starting to caramelize.

In a food processor, combine the cooked chickpeas, half of the caramelized onions, tomato paste, and curry powder. Pulse until well combined but still chunky.

Form the chickpea mixture into 4 burger patties.

In a separate bowl, mix the vegan mayonnaise and sriracha sauce. Set aside.

In another bowl, combine the shredded cabbage, sliced radishes, pickled jalapeños, chopped cilantro, and lime juice. Season with salt and mix well to create the slaw.

Cook the chickpea burger patties in a pan over medium heat for 5 minutes on each side, until crispy and heated through.

Toast the whole grain buns in a dry pan until lightly golden.

To assemble, spread the spicy mayo on the bottom bun, add the chickpea burger, top with a generous amount of slaw, and cover with the top bun.

Serve the curried chickpea veggie burgers immediately.
