Curried Chickpea Salad Sandwich with Spinach & Tomato recipe

This is a yummy sandwich with chickpeas and veggies. It has a special sauce with curry and mayo. You put it on toasted bread with spinach and tomato. It's good for lunch and easy to make!

Ingredients

1 (15 oz) can chickpeas, drained and rinsed
1/4 cup vegan mayonnaise
1 tablespoon curry powder
1 teaspoon turmeric, ground
1 teaspoon onion powder
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium carrot, grated
2 sticks celery, diced
1/4 cup red onion, finely chopped
4 large spinach leaves
1 medium tomato, sliced
4 slices whole grain bread

Method

In a medium bowl, mash the chickpeas with a fork or potato masher until flaky in texture.

Add the vegan mayonnaise, curry powder, turmeric, onion powder, lemon juice, salt, and black pepper to the mashed chickpeas. Mix well to combine.

Stir in the grated carrot, diced celery, and chopped red onion until everything is evenly distributed.

Toast the whole grain bread slices until golden brown.

Place a spinach leaf on each slice of toasted bread.

Divide the chickpea salad mixture evenly among the sandwiches, spreading it over the spinach leaves.

Top each sandwich with two slices of tomato.

Serve immediately or cover and refrigerate until ready to eat.
