Crispy Sausage Gnocchi with Roasted Tomato Sauce recipe

This is a yummy pasta dish with little potato dumplings called gnocchi. They get all crispy when you cook them with sausage pieces. Then you put a tasty tomato sauce on top that's made with fresh tomatoes and herbs.

Ingredients

1 small bunch of fresh basil
2 medium-sized ripe tomatoes
1 tbsp balsamic vinegar
250 g Italian sausage
4 cloves of garlic
1 medium yellow onion
500 g gnocchi
30 g Pecorino Romano cheese
2 tbsp olive oil
Salt to taste
Black pepper to taste

Method

Start by making the roasted tomato sauce. Chop the tomatoes and basil. Mince 2 cloves of garlic and half of the onion.

In a saucepan, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and onion, and cook until soft, about 3 minutes.

Add the chopped tomatoes, basil, and balsamic vinegar to the saucepan. Cook for 15 minutes until the tomatoes break down. Season with salt and pepper.

While the sauce is cooking, remove the casing from the sausage and cut it into half-inch pieces.

In a large frying pan, heat the remaining 1 tbsp of olive oil over medium heat. Add the sausage pieces and cook until browned, about 5 minutes.

Slice the remaining 2 cloves of garlic and the other half of the onion. Add to the pan with the sausage and cook for another 2 minutes.

Add the gnocchi to the pan with the sausage and cook, stirring occasionally, until the gnocchi is golden and crispy, about 10 minutes.

Once the tomato sauce is done, blend it with an immersion blender until smooth.

Serve the crispy gnocchi and sausage on plates, topped with the roasted tomato sauce and shavings of Pecorino Romano cheese.
