This is a yummy chicken sandwich with a twist. It has crunchy pickles and a spicy mayo sauce. You put it all in a soft bun. It's fun to make and tastes really good!

Ingredients

4 boneless chicken breasts
1/2 cup all-purpose flour
1/2 cup breadcrumbs
2 large eggs
4 dill pickles, sliced lengthways
4 tbsp spicy brown mustard
1 tbsp honey
1/2 cup mayonnaise
1 tbsp sriracha sauce
4 sesame seed buns
1/2 head green cabbage, shredded
1/4 cup apple cider vinegar
1 tbsp sugar
Salt and pepper to taste
Vegetable oil for frying

Method

Slice the chicken breasts horizontally to create 8 thin cutlets. Season with salt and pepper.

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Dip each chicken cutlet into the flour, then the eggs, and finally coat with breadcrumbs.

Heat vegetable oil in a large frying pan over medium heat. Fry the chicken cutlets for 4 minutes on each side or until golden and cooked through. Set aside on a paper towel-lined plate.

In the same pan, fry the pickle slices for 2-3 minutes on each side until crispy. Remove and set aside.

In a small bowl, mix the spicy brown mustard and honey. In another bowl, combine mayonnaise and sriracha sauce.

Toast the sesame seed buns in a dry pan until lightly golden.

For the slaw, mix shredded cabbage with apple cider vinegar, sugar, and a pinch of salt. Let it sit for 10 minutes.

Spread the spicy mayo on the bottom bun, add a layer of slaw, place two chicken cutlets, top with crispy pickles, and drizzle with honey mustard. Cover with the top bun.

Serve the crispy pickle and spicy mayo chicken sandwiches immediately.
