Crispy Marinated Tofu with Spicy Peanut Sauce recipe

This dish has tofu that's been marinated and fried until it's crispy. It's served with rice and a spicy peanut sauce. The tofu is crunchy, the sauce is creamy, and the rice makes it a full meal. It's a yummy dinner that's fun to make!

Ingredients

450 g Extra-firm Tofu
2 Tbsp Tamari
1 Tbsp Maple Syrup
1 Tbsp Sesame Oil
1 Tbsp Rice Vinegar
2 Tbsp Cornstarch
400 g Jasmine Rice
1 (400 ml) Tin of Light Coconut Milk
1 Tbsp Fresh Ginger, minced
1 Tbsp Sriracha
2 Tbsp Smooth Peanut Butter
1 Tbsp Lime Juice
1/2 tsp Crushed Red Pepper Flakes
1 Bunch of Green Onions, chopped
Vegetable Oil for frying

Press the tofu for 20 minutes to remove excess water. Cut into 1-inch cubes.

In a bowl, whisk together tamari, maple syrup, sesame oil, and rice vinegar. Add tofu cubes and marinate for 15 minutes.

Cook jasmine rice according to package instructions.

In a separate bowl, mix cornstarch with 1 tablespoon of water to create a slurry.

Heat a pan with vegetable oil over medium heat. Remove tofu from marinade (reserve the marinade) and coat with cornstarch slurry. Fry tofu until golden and crispy, about 4 minutes per side.

For the sauce, add light coconut milk, reserved marinade, minced ginger, sriracha, peanut butter, and lime juice to a saucepan. Cook over medium heat, stirring until the sauce thickens.

Serve crispy tofu over rice, topped with spicy peanut sauce. Garnish with chopped green onions and red pepper flakes.
