Crispy Honey Garlic Cauliflower recipe

This is a yummy dish with cauliflower that's crispy and covered in a sweet garlic sauce. It's like the sweet and sour cauliflower but with honey and garlic flavors. You cook the cauliflower in the oven and mix it with the sauce. It's good with rice and peas.

Ingredients

2 medium cauliflowers
4 tbsp honey
2 tbsp soy sauce
150 ml chicken stock
50 g brown sugar
2 tbsp apple cider vinegar
1 tbsp cornstarch
300 g jasmine rice
300 g frozen peas
1 tbsp grated fresh ginger
2 cloves garlic, minced
2 spring onions
Vegetable oil for roasting
Salt and pepper to taste

Method

Preheat your oven to 220°C (430°F).

Cut the cauliflowers into medium-sized florets. Place them on a baking tray, season with salt and pepper, and drizzle with vegetable oil. Roast for 25–30 minutes until crispy and golden.

While the cauliflower is roasting, cook the jasmine rice according to the package instructions.

Place the frozen peas in a bowl, cover with boiling water, and let them sit for 2 minutes until bright green. Drain and mix into the cooked rice along with the grated ginger.

For the sauce, combine honey, soy sauce, chicken stock, brown sugar, and apple cider vinegar in a saucepan over medium heat. Stir until the sugar dissolves.

Mix cornstarch with 2 tbsp of water to create a slurry. Pour into the saucepan, stirring constantly, until the sauce thickens, about 3-4 minutes.

Add the minced garlic to the sauce and cook for another minute.

Once the cauliflower is done, toss it in the honey garlic sauce until well coated.

Thinly slice the spring onions and sprinkle them over the cauliflower.

Serve the crispy honey garlic cauliflower over the ginger rice and peas.
