This dish is a yummy mix of crispy dumplings and colorful veggies, all covered in a spicy almond sauce. It's like a noodle salad but with dumplings instead. You cook the veggies and make a sauce, then mix it all with the dumplings.

Ingredients

20 Frozen Dumplings
2 Red Bell Peppers
2 Yellow Bell Peppers
1 Bunch Fresh Basil
4 Medium Carrots
1 Inch Fresh Ginger
200 g Rice Noodles
2 Tbsp Almond Butter
6 Tbsp Tamari or Soy Sauce
1 Tbsp Sriracha Sauce
1 Tbsp Maple Syrup
1 Lemon
4 Spring Onions
2 Tbsp Sesame Oil

Cook 200g of rice noodles according to the package instructions, then drain and set aside.

In a small bowl, whisk together 2 tbsp almond butter, 6 tbsp tamari, 1 tbsp sriracha sauce, 1 tbsp maple syrup, and the juice of 1 lemon to create the spicy almond sauce.

Thinly slice 2 red and 2 yellow bell peppers, 4 medium carrots, 1 inch of ginger, and 4 spring onions. Add them to a wok or large pan with 2 tbsp sesame oil and cook on high heat until they are slightly charred and soft.

In a separate pan, heat a splash of sesame oil over medium heat. Add the frozen dumplings and fry for about 3 minutes on each side until they are golden brown and crispy.

Toss the cooked rice noodles and vegetables with the spicy almond sauce in the wok until everything is well coated.

Serve the stir-fry topped with the crispy dumplings and garnish with fresh basil leaves. Squeeze extra lemon juice over the top if desired.
