Crispy Chicken Spring Rolls recipe


These are yummy rolls with chicken and veggies wrapped in rice paper. They are baked until crispy. You can dip them in your favorite sauce. They are fun to make and eat!


4 slices of smoked turkey bacon
5 spring onions
1 yellow bell pepper
1 medium zucchini
200 g baby spinach
400 g ground chicken
4 cloves of garlic
4 cm piece of ginger
2 eggs
1 tbsp cornstarch
3 tbsp hoisin sauce
1 tsp sesame oil
12 sheets of rice paper
Olive oil for brushing
Hoisin sauce, for serving


Preheat the oven to 220°C and line a baking tray with parchment paper.
Prepare the rice paper by quickly dipping each sheet in water and laying it flat on a clean surface.
In a large bowl, combine the ground chicken, finely chopped turkey bacon, sliced spring onions, minced garlic, grated ginger, shredded yellow bell pepper, grated zucchini, and chopped baby spinach.
Add the eggs, cornstarch, hoisin sauce, and sesame oil to the chicken mixture. Stir until the ingredients are well mixed.
Place about 2 tablespoons of the chicken mixture onto the center of each rice paper sheet. Fold in the sides and roll tightly, sealing the edge with a dab of water.
Brush each spring roll with a little olive oil and place them on the prepared baking tray.
Bake in the preheated oven for 15 minutes, turning halfway through, until the rolls are golden and crispy.
Serve the crispy chicken spring rolls hot with a side of hoisin sauce for dipping.
