This is a yummy salad with thin Brussels sprouts, sweet apples, and crunchy walnuts. It's mixed with a tangy mustard dressing. You can make it in 25 minutes for a fresh side dish.

Ingredients

1 kg Brussels Sprouts
30 g Unsalted Butter
1 Medium Apple
1 Small Red Onion
60 ml Lemon Juice
1 tsp Honey
1 Handful of Fresh Dill
50 ml White Wine Vinegar
1 Tbsp Dijon Mustard
150 g Smoked Turkey Breast, chopped
50 g Walnuts, chopped
50 g Feta Cheese, crumbled

Method

Wash the Brussels sprouts, trim the ends, and slice them very thinly to create a shredded texture. Place them in a large mixing bowl.

In a small saucepan, melt the butter over medium heat until it turns a golden brown color, then remove from heat.

Cut the apple into thin slices and finely chop the red onion. Add both to the bowl with the Brussels sprouts.

In a separate bowl, whisk together the browned butter, lemon juice, white wine vinegar, honey, and Dijon mustard to create the dressing. Season with salt and pepper to taste.

Chop the fresh dill and add it to the Brussels sprouts mixture.

In a non-stick pan, cook the chopped smoked turkey breast over medium heat until slightly crispy, about 5 minutes, then add to the salad.

Pour the dressing over the salad and toss well to combine.

Toast the chopped walnuts in a dry pan until fragrant and lightly browned, then sprinkle over the salad.

Finally, crumble feta cheese on top of the salad before serving.
