Crispy Bacon and Feta Cheese Wedge Salad recipe


This is a fresh salad with crunchy lettuce wedges, topped with creamy feta dressing, crispy bacon, and tangy pickled onions. It's a yummy mix of salty, creamy, and crisp textures.


150 g Greek yogurt
100 g feta cheese, crumbled
2 lemons
1 small red onion
1 large iceberg lettuce
100 g bacon, chopped
1 handful of dill, chopped
2 tablespoons olive oil
1 teaspoon honey
Salt and pepper to taste


Chop the dill and set aside.
Place the lettuce wedges on a large serving plate.
In a bowl, mix the Greek yogurt and crumbled feta cheese. Mash with a fork to combine well. Season with salt, pepper, and the zest and juice of 1 lemon to create a tangy feta dressing.
Thinly slice the red onion and toss with a pinch of salt and the juice of the remaining lemon. Let it sit for 10 minutes to quick pickle.
In a medium frying pan, cook the chopped bacon over medium heat until crispy. Drain on paper towels, reserving a tablespoon of the bacon fat.
Drizzle the feta dressing over the lettuce wedges, then top with the pickled onions and crispy bacon.
Mix the reserved bacon fat with olive oil and honey, then drizzle over the salad.
Garnish with chopped dill and serve immediately.
