Creamy Zucchini Penne Pasta recipe

This pasta dish is full of creamy sauce and tasty zucchini. It's made with penne pasta, fresh zucchini, and a creamy tomato sauce. You cook the pasta, make the sauce with zucchini, and mix them together. It's yummy and perfect for dinner!

Ingredients

1 Large Zucchini
1 Yellow Onion
2 Cloves of Garlic
1 Tsp Dried Oregano
1 Tsp Dried Basil
1 Tbsp Balsamic Vinegar
1 x (400 g) Tin Crushed Tomatoes
1 Tsp Sugar
1/2 Cup Heavy Cream
400 g Penne Pasta
1/4 Cup Grated Parmesan Cheese
2 Tbsp Olive Oil
Salt and Pepper to taste

Method

Dice the zucchini into 2cm pieces and finely chop the onion and garlic.

Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onion and garlic with a pinch of salt and cook for about 5 minutes until softened.

Add the zucchini to the pan and cook for another 5 minutes until slightly browned.

Stir in the dried oregano and basil, then pour in the balsamic vinegar and cook for 30 seconds.

Pour in the crushed tomatoes, add the sugar, and let the sauce simmer for about 15 minutes until it thickens slightly.

While the sauce is simmering, cook the penne pasta in plenty of boiling salted water according to the package instructions until al dente.

Drain the pasta and return it to the pot.

Stir the heavy cream into the tomato sauce and cook for another 2 minutes until the sauce is creamy.

Add the sauce to the cooked pasta and mix well.

Serve the pasta in bowls, topped with grated Parmesan cheese and a sprinkle of black pepper.
