Creamy Tomato Penne with Vodka recipe

This is a yummy pasta dish with a creamy tomato sauce. It has cheese and a special ingredient, vodka, that makes it taste so good. You boil pasta, make a sauce with tomatoes, cream, and vodka, and mix it all together.

Ingredients

1 small Yellow Onion
1 Red Bell Pepper
4 cloves Garlic
100 g Grated Pecorino Romano Cheese
2 tbsp Tomato Paste
60 ml Vodka
400 g Penne Pasta
240 ml Heavy Cream
1 handful Fresh Parsley
2 tbsp Extra Virgin Olive Oil
Salt to taste
Black Pepper to taste

Method

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente, then drain, reserving 1 cup of pasta water.

While the pasta is cooking, finely chop the yellow onion and red bell pepper. Mince the garlic cloves.

In a large pan, heat the extra virgin olive oil over medium heat. Add the chopped onion and bell pepper, and cook until softened, about 5 minutes.

Add the minced garlic to the pan and cook for another minute until fragrant.

Stir in the tomato paste and cook for 2 minutes to deepen the flavor.

Carefully pour in the vodka, letting it simmer for about 30 seconds to cook off the alcohol.

Lower the heat and add the heavy cream to the pan, stirring to combine. Simmer for 5 minutes, allowing the sauce to thicken slightly.

Mix in the grated Pecorino Romano cheese until melted and the sauce is smooth. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency. Season with salt and black pepper to taste.

Add the cooked penne to the sauce, tossing to coat the pasta evenly. If needed, add more pasta water to loosen the sauce.

Chop the fresh parsley and sprinkle over the pasta before serving.

Divide the creamy tomato penne among plates and serve hot.
