Creamy Tomato and Spinach Penne recipe


This is a pasta dish with a rich tomato sauce, spinach, and penne. It's spicy and creamy, but it doesn't have any meat or dairy. You cook the pasta and mix it with the sauce and spinach.


1 large yellow onion
3 cloves of garlic
1 tbsp olive oil
1 tsp red pepper flakes
400 g canned diced tomatoes
2 tbsp tomato paste
300 g penne pasta
1 tsp dried oregano
1 tsp dried basil
150 g fresh spinach
1 tbsp balsamic vinegar
60 g vegan parmesan cheese
Salt to taste


Fill a large pot with water, add a pinch of salt, and bring to a boil for the pasta.
Chop the onion and mince the garlic. In a large pan, heat the olive oil over medium heat and add the onion, garlic, and red pepper flakes. Cook for 3-4 minutes until the onion is soft.
Stir in the diced tomatoes and tomato paste. Add oregano, basil, and a pinch of salt. Let the sauce simmer for about 10 minutes.
While the sauce is simmering, add the penne to the boiling water and cook according to the package instructions until al dente.
Wash the spinach and add it to the sauce, letting it wilt for 2-3 minutes.
Drain the cooked penne and add it to the sauce. Toss everything together to coat the pasta with the sauce.
Remove from heat and stir in the balsamic vinegar and vegan parmesan cheese until well combined.
Serve hot, garnished with extra vegan parmesan if desired.
