Creamy Lemon-Garlic Spaghetti with Spinach recipe


This is a pasta dish with a creamy sauce. It has garlic, lemon, and spinach. You cook the pasta and mix it with the sauce. It's yummy and not too spicy.


2 shallots, finely chopped
4 garlic cloves, minced
1 fresh red chilli, deseeded and finely chopped
200 g cream cheese
1 tbsp dried Italian herbs
3 tbsp lemon juice
400 g spaghetti
100 g baby spinach
30 g grated Parmesan cheese
Zest of 1 lemon
2 tbsp olive oil
Salt to taste
Black pepper to taste


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the spaghetti and cook according to the package instructions until al dente.
While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the shallots and a pinch of salt, cooking for 3-4 minutes until softened.
Add the minced garlic and chopped red chilli to the pan, cooking for another 2 minutes until fragrant.
Lower the heat and add the cream cheese, stirring until melted and smooth. Mix in the dried Italian herbs and lemon juice, and cook for 2 minutes.
Stir in the baby spinach and cook until just wilted. Season the sauce with salt and black pepper to taste.
Drain the cooked spaghetti, reserving a cup of pasta water. Add the spaghetti to the sauce, tossing to coat. If the sauce is too thick, add a little pasta water to reach the desired consistency.
Serve the spaghetti in bowls, topped with grated Parmesan cheese and lemon zest.
