Creamy Lemon Basil Penne recipe


This is a pasta dish with a creamy lemon sauce and fresh basil. It's made with penne noodles, lemon juice, and a touch of garlic for flavor. The sauce is creamy and tangy, and the basil adds a fresh taste. It's a yummy dinner for your family!


4 Garlic Cloves
1 Lemon
400 g Penne Pasta
1 Tsp Coriander Seeds
250 g Mascarpone Cheese
40 g Grated Pecorino Cheese
1 (30 g) Bunch of Fresh Basil
1 Tbsp Olive Oil
Salt, To Taste
Black Pepper, To Taste


Bring a large pot of salted water to a boil. Peel and finely slice the garlic. Zest the lemon and then cut it in half to juice it.
Cook the penne pasta in the boiling water according to the package instructions until al dente.
While the pasta is cooking, place a large frying pan over medium heat and add 1 tbsp of olive oil. Add the sliced garlic and coriander seeds, and cook for 2 minutes until fragrant.
Stir in the mascarpone cheese and the juice of the lemon into the frying pan, mixing until smooth. Season with salt and black pepper to taste.
Drain the pasta, reserving a cup of the pasta water. Add the pasta to the sauce in the frying pan, tossing to coat. If the sauce is too thick, add a little of the reserved pasta water to reach the desired consistency.
Remove the pan from the heat, stir in the grated pecorino cheese and half of the fresh basil, torn into pieces.
Serve the pasta garnished with the remaining basil and lemon zest. Offer extra pecorino cheese at the table for those who want more.
