Creamy Fettuccine with Broccoli and Lemon recipe

This is a yummy pasta dish with creamy sauce, green broccoli, and a zesty touch of lemon. You boil pasta, cook broccoli, make a sauce with milk, cheese, and lemon, then mix it all together. It's good for dinner and not too hard to make!

Ingredients

1 large bunch broccoli
10 oz fettuccine pasta
3 cloves garlic
1 oz unsalted butter
2 tbsp all-purpose flour
1 cup whole milk
3/4 cup grated Parmesan cheese
1/2 tsp black pepper
1/2 tsp salt
1 lemon
1/4 cup pasta water

Method

Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the fettuccine and cook according to the package instructions, usually 9-10 minutes.

While the pasta is cooking, wash the broccoli and cut it into bite-sized florets.

In the last 3 minutes of the pasta's cooking time, add the broccoli to the boiling water.

Drain the pasta and broccoli, reserving 1/4 cup of the pasta water for the sauce.

In a pan over medium heat, melt the butter. Peel and mince the garlic, then add it to the pan, cooking until fragrant, about 1 minute.

Sprinkle the flour over the butter and garlic, whisking until combined.

Pour in the milk slowly, whisking constantly until the sauce thickens, about 4-5 minutes.

Grate the zest of the lemon and add it to the sauce along with the juice of half the lemon.

Stir in the grated Parmesan cheese, salt, and pepper, and cook until the cheese is melted and the sauce is smooth.

Add the cooked pasta and broccoli to the sauce, tossing to coat. If the sauce is too thick, add the reserved pasta water to reach the desired consistency.

Serve the creamy fettuccine with broccoli and lemon on plates, garnished with extra Parmesan cheese if desired.
