Creamy Chicken and Mushroom Orzo recipe

This is a creamy pasta with chicken and mushrooms. It's like a hug in a bowl! You cook pasta and mix it with chicken, mushrooms, and cheese. It's yummy and not too hard to make.

Ingredients

2 Chicken Breasts
250 g Mushrooms
400 g Orzo
3 Eggs
80 g Parmesan Cheese
1 Clove of Garlic
1 Tbsp Olive Oil
1 Tsp Dried Oregano
Salt to taste
Black Pepper to taste
1 Tbsp Fresh Parsley

Method

Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the orzo and cook according to the package instructions until al dente.

While the orzo is cooking, heat the olive oil in a large pan over medium heat. Add the diced chicken breasts seasoned with salt, pepper, and oregano. Cook until golden brown and cooked through.

Chop the garlic and slice the mushrooms. Add them to the pan with the chicken and cook until the mushrooms are soft.

In a bowl, whisk together the eggs, grated Parmesan cheese, and a pinch of black pepper.

Once the orzo is cooked, drain it, reserving a cup of the pasta water. Add the orzo to the pan with the chicken and mushrooms.

Remove the pan from the heat, and quickly stir in the egg and Parmesan mixture. If the sauce is too thick, add a little reserved pasta water until you reach a creamy consistency.

Chop the fresh parsley and sprinkle it over the top before serving.
