Creamy Chicken and Mushroom Fusilli with Spinach recipe


This is a yummy pasta dish with chicken and mushrooms. It has creamy cheese and healthy spinach. You cook pasta and mix it with chicken, mushrooms, cheese, and spinach. It's good for dinner and makes you feel happy!


2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces fusilli pasta
1 cup sliced cremini mushrooms
3 cups fresh spinach
1 x 4 oz log goat cheese
1/2 cup grated mozzarella cheese
1/2 cup reserved pasta cooking water
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
Salt to taste
Black pepper to taste


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the fusilli pasta and cook according to package instructions until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta water before draining.
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt, pepper, and garlic powder, and cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and set aside.
In the same skillet, add the sliced mushrooms and thyme, and cook until the mushrooms are soft and browned, about 5 minutes.
Reduce the heat to low and add the spinach to the skillet, stirring until it wilts, about 2 minutes.
Return the cooked chicken to the skillet with the mushrooms and spinach. Add the cooked fusilli pasta, goat cheese, mozzarella cheese, and reserved pasta water. Stir until the cheeses melt and create a creamy sauce that coats the pasta, about 2-3 minutes.
Taste and adjust seasoning with more salt and pepper if needed.
Serve the creamy chicken and mushroom fusilli hot, garnished with extra black pepper or grated cheese if desired.
