Cranberry orange bread is a delicious and festive treat that is perfect for the holiday season. This easy-to-make bread is packed with the flavors of fresh cranberries and zesty orange, making it a tasty and unique addition to any breakfast or dessert spread. 

Ingredients

2 cups all-purpose flour
¾ cups white sugar
2 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup canola oil
2 cups fresh cranberries
1 cup mandarin oranges, drained
2 large eggs
¾ cup unsweetened almond milk
1 teaspoon vanilla extract
1 teaspoon orange zest

Method

Preheat oven to 400 degrees F (200 degrees C). Grease a large loaf pan

Combine flour, baking powder, salt, and baking soda in a large bowl in a large bowl.

In another bowl combine the sugar, eggs, oil, milk, vanilla extract , and orange zest until smooth. Gradually stir egg mixture into flour mixture until batter is thoroughly incorporated. The fold in the mandarin oranges and cranberries into the batter.

Pour batter into prepared loaf pan.

Bake in preheated oven for 5 minutes; reduce heat to 350 degrees F (175 degrees C) and continue baking until center of bread springs back when touched, 35 to 40 minutes.
