These Cranberry Oat Bars are a sweet treat with tangy cranberries and a hint of orange. They have a soft, chewy texture with bits of white chocolate. It's a yummy snack for any time!

Ingredients

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
3/4 cup unsalted butter, melted
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 tablespoon orange zest
1 teaspoon vanilla extract
1 cup dried cranberries, roughly chopped
3/4 cup white chocolate chips
6 ounces cream cheese, softened
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1/4 cup white chocolate chips, melted for drizzle
1/4 cup dried cranberries, for topping

Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.

In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.

In a large bowl, combine melted butter, brown sugar, and granulated sugar until well mixed.

Whisk in eggs, one at a time, then stir in orange zest and vanilla extract.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in chopped cranberries and white chocolate chips.

Spread the batter evenly into the prepared pan and bake for 18-22 minutes, until golden brown and a toothpick comes out clean.

Cool the bars in the pan on a wire rack.

While the bars cool, prepare the frosting by beating the cream cheese until smooth, then gradually mix in powdered sugar and vanilla extract.

Spread the frosting over the cooled bars, sprinkle with additional cranberries, and drizzle with melted white chocolate.

Cut into bars and serve, or refrigerate to firm up the frosting before serving.
