This is a yummy shrimp curry with coconut and lime. It's creamy and has spices like cinnamon and cardamom. You cook shrimp with onions, ginger, and spices, then add coconut milk and lime juice. It's good with rice!

Ingredients

1 kg Uncooked Shrimp, Deveined and Tails Removed
1 Tsp Turmeric Powder
1 Tbsp Olive Oil
1 Bay Leaf
2 Cloves
2 Cardamom Pods
1 Small Cinnamon Stick
2 Medium Onions, Finely Chopped
1 Tbsp Grated Ginger
1 Tsp Brown Sugar
2 Tbsp Lime Juice
400 ml Coconut Milk
1 Tsp Ground Coriander
1 Tsp Cumin Powder
1/2 Tsp Chili Powder
Salt to taste
Fresh Cilantro Leaves for garnish

Method

In a bowl, mix the shrimp with turmeric powder and a pinch of salt. Let it marinate for 15 minutes.

Heat olive oil in a large pan over medium heat. Add the bay leaf, cloves, cardamom pods, and cinnamon stick. Cook for 1 minute until fragrant.

Add the chopped onions and brown sugar to the pan. Cook for about 8 minutes until the onions are golden and soft.

Stir in the grated ginger and cook for another 2 minutes.

Pour in the coconut milk, lime juice, ground coriander, cumin powder, and chili powder. Bring to a gentle simmer and cook for 5 minutes.

Add the marinated shrimp to the sauce and cook for about 5-7 minutes, or until the shrimp are pink and cooked through.

Season with salt to taste and remove the whole spices if desired.

Garnish with fresh cilantro leaves before serving.

Serve the curry with steamed basmati rice or naan bread for a complete meal.
