Coconut Chocolate Bars recipe


This is a yummy treat made with shredded coconut and sweet chocolate. You mix coconut with syrup and oil, then cover it in melted chocolate. It's like a candy bar, but you make it yourself!


3 cups unsweetened shredded coconut
1/2 cup coconut oil, melted
1/2 cup honey
1 teaspoon vanilla extract
1 cup dark chocolate chips
1 tablespoon coconut oil


Line an 8 x 8-inch pan with parchment paper and set aside.
In a food processor, combine 3 cups shredded coconut, 1/2 cup melted coconut oil, 1/2 cup honey, and 1 teaspoon vanilla extract. Blend until the mixture sticks together.
Transfer the mixture to the lined pan and press down firmly into an even layer.
Refrigerate for at least 30 minutes to firm up.
In a microwave-safe bowl, combine 1 cup dark chocolate chips with 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Pour the melted chocolate over the firm coconut layer, spreading it out to cover completely.
Refrigerate for another 30 minutes, or until the chocolate is set.
Use the parchment paper to lift the set mixture out of the pan, then cut into bars with a sharp knife.
